To create this full-flavored bone broth, we first take beef knuckle and meaty neck bones, and roast them to get a good caramelization. Then, we add onion, celery, carrots, and tomato paste to the mix. After simmering this goodness for 12 hours, we remove the meaty neck bones and separate the beef from the bones (to reserve for other delicious meals). Then, we add the bones back into the broth and continue simmering for a total of 24 hours. This creates a dark, rich bone broth that is full of flavor. We strain the broth, cool it in a blast chiller, package and freeze it so it is ready for your favorite recipe.
