What quantity of beef is best for me?

The chart below should help you select the amount of beef appropriate for you. You will see the total weight of the beef listed at the bottom of the page.

What part of the steer will my beef come from?

When you order a portion of a steer (1/8, 1/4 or 1/2), you are actually receiving that portion of the whole animal. For example, if you order 1/4 of beef, you are not receiving just a front or hind quarter. You actually receive 1/4 of the cuts from the entire animal. The whole animal is processed and the cuts are split evenly in 4 ways.

How much ground beef, steaks, and roasts will I receive?

Our steers are approximately 1,200 pounds live weight at harvest.  That will typically yield a 750 pound hanging weight carcass, which then yields about 490 pounds of boneless meat.  Of that 490 pounds of boneless meat from a whole steer, you can expect approximately:

  • 185 pounds lean trim, or ground beef
  • 85 pounds round roasts and steaks
  • 90 pounds chuck roasts and steaks
  • 80 pounds rib and loin steaks
  • 50 pounds other cuts (brisket, flank, short ribs, skirt steak)

This means if you have ordered 1/2 beef, you can expect approximately:

  • 92 pounds lean trim, or ground beef
  • 42 pounds round roasts and steaks
  • 45 pounds chuck roasts and steaks
  • 40 pounds rib and loin steaks
  • 25 pounds other cuts (brisket, flank, short ribs, skirt steak)

If you have ordered 1/4 beef, you can expect approximately:

  • 46 pounds lean trim, or ground beef
  • 22 pounds round roasts and steaks
  • 22 pounds chuck roasts and steaks
  • 20 pounds rib and loin steaks
  • 12 pounds other cuts (brisket, flank, short ribs, skirt steak)

If you have ordered 1/8 beef, you can expect approximately:

  • 24 pounds lean trim, or ground beef
  • 11 pounds round roasts and steaks
  • 12 pounds chuck roasts and steaks
  • 10 pounds rib and loin steaks
  • 6 pounds other cuts (brisket, flank, short ribs, skirt steak)

What happens after I get on the wait list?

Once you are on the wait list, you will be emailed when the steers have reached their ideal finish quality and we have a specific date that they are going to the butcher. At that point in time, you will have the opportunity to put down a deposit for your beef. If you are ordering a half or full animal, we will reach back out once the deposit is received to customize your order.

How much is the deposit for beef?

1/8 beef: $100 deposit

1/4 beef: $200 deposit

1/2 beef: $300 deposit

Full beef: $400 deposit
